Belizian Vacation
YOU GUYS! I just spent the last week in Belize at the most beautiful resort called Victoria House with ten of the most amazing people. Let's just say, we rang in the New Year right! Ambergris Caye is a small island in Belize that is most known for it's beautiful beaches, amazing warm weather and water sports. My great friend Kate has been going here for years (her dad owns Victoria House) and we were lucky enough to get an invite to join. If you're looking for a get-a-way, you have to check it out.
The weather for our winter break was mid-80's and sunny. We spent our days lounging on the beach or at the pool, drinking coconut mojitos, and playing cornhole.
One of my favorite days we took a day trip to go fishing. We woke up early and fished all morning. When we arrived back at Victoria House they ask you how you'd like your fish prepared for lunch. We had so much fish- we asked for some to be made in to ceviche, some grilled, a little blackened, and the rest tempura'd. Everything was delicious and we really enjoyed the experience.
My most favorite day we got a catamaran to go out snorkeling. We snorkeled at Hol-Chan marine reserve then headed to swim with the sharks and stingrays at Shark-ray Alley. We swam with the fish, played in the water, and jumped off the catamaran. After we snorkeled, we headed to the island of Caye Caulker for lunch. What a cute little town, with tons of personality. There were hammocks, kayaks and fresh fruit stands everywhere. After lunch, we hopped back on the boat and enjoyed the sunshine and some cocktails. This day was absolutely one I will never forget.
The trip was so awesome. Nights out dancing, nights in playing Cards against humanity, and many meals with great company.
I can't wait for the next trip, I will definitely be heading back.
